How to choose the blocks for your building? First and foremost it will depend on the theme. If you want to mold a Jurassic scenery you will want to get rid of blocks that feel synthetic, manmade. On the other hand, if you are erecting a castle, logs, stone, fences and the like should be used for almost its entirety.
Secondly, you should look into color schemes. A color scheme is a combination of tones that synergize together. They are somehow related to the chromatic wheel; in fact there are very intuitive online applications that you can use to get your favorite color combos. Our favorite is Paletton, which is complete, free and user-friendly.
In Paletton you will notice several scheme modes: monochrome, triad, tetrad, adjacent... Triad and tetrad work better for manmade structures, while monochrome and adjacent works better for nature and landscape.
Now that you gained this knowledge, how should you apply it to Minecraft? First, do not go overboard using a nameless amount of blocks. Block variation is an important technique praised by many, but it must be executed with care.
Passing from colors to blocks is not an easy job. Each block texture can contain dozens of tones. Hopefully we can infer the average or preponderant hue of each color to create a block palette to paint our worlds with. We first learnt about these palettes from Cenandro, but his has been obsolete for a long time due to the implementation of new blocks.
