Jam maker Jennifer Williams from Naked Jam visits James Martin in his Home Comforts kitchen to watch the master chef make a delicious frangipane tart using her strawberry jam. I have been known to fall out of trees! I have developed some new taste combinations but use traditional cooking methods so its take on cooking jam. I enjoy supplying individual boutique hotels and personal orders alongside special events such as Royal Ascot, Chelsea Flower Show. Use the jam of your choice — raspberry is the classic option, though cherry also works well.

For the pastry, put the butter and flour into a food mixer and mix until the texture resembles breadcrumbs, then add the egg and mix until combined into a firm dough. Spread the jam over the base of the tart, then place in the fridge to rest for 10 minutes. To make the frangipane, beat the butter, vanilla seeds and sugar together in a bowl until pale and fluffy. Crack in the eggs, one at a time, beating well after each addition, until all of the eggs have been fully incorporated into the mixture. Fold in the ground almonds carefully by hand.

Use the pastry to line a 23cm loose-bottomed tart tin see step-by-step. Cover with cling film and leave in the fridge to rest for 1 hr. To make the filling, put the butter, sugar and lemon juice in a food processor, then blend until light and fluffy. With the machine running at full speed, add the eggs and almond extract, and whizz until combined to a smooth paste. Fold in the breadcrumbs and ground almonds by hand.
